Jungle French Toast Sticks

1 small banana, peeled
6 slices whole grain or whole wheat bread
6 tablespoons tub-style light cream cheese
2 eggs
1/2 cup fat-free milk
1/8 teaspoon ground cinnamon (optional)
Powdered sugar (optional)

Instructions
Step 1:
Preheat the oven to 400°. Lightly coat the baking pan with nonstick cooking spray. Save until Step 4. Put the banana on the cutting board and use a table knife to slice the banana.
Step 2:
Spread the cream cheese on 3 of the bread slices. Top with banana slices. Put the other 3 bread slices on top. Put the sandwiches on the cutting board and use the knife to cut each sandwich lengthwise into 3 pieces and set aside.
Step 3:
Crack the eggs into a medium size bowl and beat with fork until combined. Add the milk and optional cinnamon, and beat until mixed.
Step 4:
Dip a sandwich piece into the egg mixture, making sure to coat all sides. Put in prepared baking pan and repeat with remaining sandwich pieces and egg mixture. Pour any leftover egg mixture over the sandwich pieces in the pan.
Step 5:
Put baking pan in oven and bake for about 20 minutes or until pieces are brown and toasted, using the spatula to turn once halfway through baking time.
Step 6:
Serve warm, sprinkled lightly with optional powdered sugar.
